Corner Kitchen: Taco Stuffed Poblano Peppers

LUBBOCK, Texas (KJTV) -

Ingredients

· 2 tsp. olive oil

· 1 lb. ground pork, turkey or beef

· 1 onion, diced

· 1 pkg. reduced sodium taco seasoning

· 6-8 poblano peppers

· 8 oz. shredded Mexican blend cheese

· Optional toppings: diced avocado, guacamole, pico de gallo, sour cream/plain yogurt

Instructions

1. Preheat oven to 400 degrees.

2. Heat oil a large skillet, over medium heat; add ground meat and onions. Cook until meat is done and browned.

3. Add taco seasoning according to package directions.

4. While meat is cooking, cut peppers in half down the length of the pepper. Remove seeds. Place pepper halves onto a cookie sheet or baking dish.

5. Fill each peppers with meat mixture. Top each pepper with ¼ cup cheese.

6. Place peppers in oven and cook for 15-20 minutes or until skins of peppers begin to brown; remove from oven.

7. Let peppers cool a few minutes before serving. Add toppings as desired!
