Tropical German Style Pancake
· 3 large eggs
· ½ cup vanilla almond milk
· 1 tablespoon almond flour
· ½ teaspoon olive oil
· 2 cups O Organics Tropical Blend Frozen Fruit, defrosted
· 1 tablespoon unsweetened shredded coconut
· Optional: honey, chopped nuts
1. Heat oil in a medium skillet over medium heat.
2. In a medium bowl, whisk together the eggs, almond flour, and almond milk until well blended.
3. Slowly pour the egg mixture into the hot skillet; cover with lid. Cook on medium low heat for about 7-9 minutes, until eggs are set. Remove from heat.
4. Spread fruit over pancake and sprinkle with honey. If desired, drizzle with honey and top with chopped nuts.
