Roasted Green Chile and Chorizo Bake

INGREDIENTS  

  • ½ cup green chilies, roasted and chopped
  • 1 lb Chorizo
  • 2 cups Cauliflower Rice
  • 1/4 cup Yellow Onion
  • 2 cloves garlic minced
  • 1/4 cup Chicken Broth
  • 4 eggs
  • 1 tsp salt
  • 1/2 tsp Pepper
  • 1 Jalapeno Optional (topping)
  • 1/2 cup Cilantro Optional (topping)
  • 1 Avocado Optional (topping)

INSTRUCTIONS

1. Preheat oven to 375'

2. Heat large skillet over medium heat and cook the chorizo until cooked through. Remove from pan

3. Drain all but 1 Tbls of fat from the pan and add in the onion and garlic, cook for 2-3 minutes. Then add in the green chile, cauliflower rice, broth, salt, pepper, and the chorizo. Stir together and pour into 8x8 baking dish

4. Whisk the eggs together in a bowl and pour over the mixture in the baking dish. Stir together slightly to incorporate and then place in the oven for 15-20 minutes (until set)

5. Let cool, slice and serve with toppings of choice
