FOX34 Corner Kitchen: peppered turkey veggie quesadillas

Peppered Turkey Veggie Quesadillas 

  • pound peppered turkey (from deli), sliced
  • ½ pound sliced bell peppers (from salad bar)
  • ¼ pound sliced red onions (from salad bar)
  • ¼ cup pesto
  • 2 cups shredded asiago cheese
  • 1 pkg. Protein Up Flat Outs
  • 1 large avocado, diced

Instructions

1. Preheat oven to 425 degrees.

2. In a large skillet, over medium heat, stir together bell peppers, red onions and pesto. Stir fry until vegetables are soft, about 4-6 minutes.

3. While the veggies are cooking, dice turkey.

4. Place Flat-Out on cookie sheet. On half of the Flat-Out, place ¼ of the turkey and veggie mixture; top with ¼ cup cheese and sprinkle with ¼ of avocado. Fold in half. Repeat with 3 more Flat-Outs and place cookie sheet in oven.

5. Bake for 8-10 minutes until crispy. Serve immediately.
