Mexican Cauliflower Stir-Fry

Ingredients

  • 1 package Cauliflower rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup salsa (preferred level of spiciness)
  • 1 pound stir-fry meat (chicken or beef) with onions and bell peppers
  • ½ cup frozen corn
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • ½ cup fresh cilantro, chopped
  • salt to taste
  • 1 cup shredded cheddar/Monterey jack cheese

Instructions

1. Warm the tablespoon of olive oil in a large skillet over medium heat. Add the stir fry meat, bell peppers and onions; cook for 2-3 minutes; remove from heat.

2. Add the cauliflower rice, corn, beans, salsa, chili powder, and cumin to the hot skillet (add more olive oil if needed).

3. Stir everything together and continue to cook for about 5 minutes then remove the skillet from the heat and set aside.

4. Place the mix in a serving bowl and top with the cheese and cilantro. Serve and enjoy
