Roasted Brown Butter Honey Garlic Carrots 

Ingredients 

• 16 oz. baby carrots 
• 2 Tablespoons butter
• 2 Tablespoons honey 
• 2 garlic cloves, chopped 
• salt and pepper
• parsley, chopped for garnish

Instructions 

1. Preheat oven to 425 degrees. In a medium saucepan add the butter and cook over medium high heat. Continue to stir for a few minutes until the butter starts to become frothy and brown. Add the honey and garlic and remove from heat. 

2. In a large bowl add the carrots and drizzle the sauce on top. Toss until coated and spread evenly on a large baking sheet. Season with salt and pepper.

3. Bake for 15-20 minutes or until carrots are tender. Remove from oven and serve.

Balsamic Roasted New Potatoes with Asparagus

Ingredients 

• 1 lb. small new potatoes 
• 1 bunch asparagus tips
• 2 tbsp. olive oil
• 4 tbsp. balsamic vinegar 
• 1 tsp. garlic salt
• A generous pinch of salt and pepper

Instructions

1. Preheat oven to 400

2. In a 9x13 baking dish, add the olive oil, balsamic vinegar and salt. Add the potatoes and toss to coat fully before roasting for 20 minutes.

3. After 20 minutes, add the asparagus with a little extra olive oil, if needed. Toss to coat and cook for a further 15 minutes.

4. Season with extra balsamic vinegar, salt and pepper.  Serve and enjoy!
