Open-faced Turkey Sandwich
1 French Baguette sliced
Deli Turkey Meat, sliced thin
Colby Jack cheese (Or cheese or choice), sliced thin
1 cucumber sliced thin (mandolin may be helpful)
½ avocado, diced small
1. Slice French Baguette ½ inch thick.
2. Lay a spoonful of Red Pepper Mayo on baguette slice.
3. Lay turkey and cheese onto baguette.
4. Top with thinly sliced cucumber and avocado.
Red Pepper Mayo
1lb red pepper
1tbsp olive oil
¼ cup lite mayo
1 glove garlic
1. Dice red pepper and put into food processor with the olive oil, garlic, and lite mayo.
2. Pulse until smooth.
