FOX34 Corner Kitchen: Texas Boys Ranch Cowboy & Cowgirl Cookies

This recipe was made with the help of Traci Cheek from the Texas Boys Ranch. TBR is a non-profit basic childcare facility, a foster care and adoption agency and children's shelter. The organization has served more than 1,100 children from 125 Texas communities. Cowboy/Cowgirl Cookies:

INGREDIENTS:

2 large eggs
2 cups old-fashioned oats
2 cups all-purpose flour
1 tsp baking soda
1 1/2 cups brown sugar
1/2 tsp salt
1/2 cup sugar
1 cup butter
1 1/2 tsp vanilla extract 
2 cups chocolate chips
1 cup flaked coconut
3/4 cups pecans

DIRECTIONS:

1. In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well.
2. Combine the flour, baking soda and salt. Add to creamed mixture; beat well.
3. Stir in oats, chocolate chips, coconut & pecans.
3. Drop by rounded teaspoonfuls onto a greased baking sheet. Bake at 350 for about 12 minutes or until browned. Place on wire racks to cool
