Quick and east sauteed chicken:
Ingredients (makes four servings):
4 boneless skinless chicken breasts (4 ounces each)
1 teaspoon paprika (preferably smoked)
1 teaspoon dried thyme
1/2 teaspoon garlic salt
1/8 teaspoon grounded red pepper
2 teaspoons olive oil
1. Place chicken breasts between sheets of waxed paper or plastic wrap; pound to even 1/2-inch thickness.
2. Combine paprika, thyme, garlic salt and red pepper in a small bowl; rub over both sides of chicken
3. Heat oil in a large nonstick skillet over medium heat. Add chicken; cook 4 to 5 minutes per side or until the chicken is no longer pink in the center.
