No-Bake Spinach Dip
1 tablespoon olive oil
4.5 ounces fresh spinach, very finely chopped
2 cloves garlic
pinch of salt
1 cup plain Greek yogurt
¼ cup low fat sour cream
1 tablespoon red wine vinegar
3/4 cup crumbled feta cheese
1. Heat the olive oil in a medium skillet. Add the spinach and cook, stirring occasionally, for about 3 minutes.
2. When the spinach has cooked down, add the garlic. Stir and cook until translucent and fragrant (careful not to burn! Overcooked garlic tastes bitter).
3. Remove the skillet from the heat and stir with the remaining ingredients until smooth.
