Fox 34 Corner Kitchen: Healthy beans and rice recipe

Rice and Beans

2 tsp extra virgin olive oil

1 each medium onions

2 each medium garlic cloves

3/4 cup short grain brown rice

1 1/2 cup low sodium vegetable broth

1 tsp ground cumin

1/4 tsp ground cayenne (red pepper)

3 1/2 cup canned black beans, drained

Directions

1. In a stockpot over medium-high heat, heat the oil. Add the onion

and garlic and sauté for 4 minutes. Add the rice and sauté for 2

minutes.

2. Add the vegetable broth, bring to a boil, cover and lower the

heat and cook for 20 minutes. Add the spices and black beans.
